Who is Nynalis?
Ninalys Whisky vieilli en fût de Chardonnay is made from 100 % french malted barley. The new make obtained after a double distillation in our Charentais stills is then aged in toasted French oak barrels, as well as barrels used for French Chardonnay. It will mature for more than 3 years, before being blended and slowly reduced in fresh Tarare water until it reaches 46 % ABV.

The distillery welcomed two new stills carrying innovative technology :
low-temperature distillation. The Honoré manufacture refined this distillation technique, also known as vacuum distillation, over several years.Since boiling temperatures are linked with localized pressure, all air is emptied out of the stills so that boiling occurs at a low temperature.
This distillation technique makes it possible to significantly reduce the energy required throughout the distillation process, and safeguard aromas that are more sensitive to high temperatures.v
